Indeed, a collective engagement of certain producers and merchant-breeders paid many efforts to convert its original narrow image and vintage consumption reputation, where it would eventually only have been consumed as a digestive and sometimes accompanied with a coffee (photo credits: <a href=\"http:\/\/www.facebook.com\/pg\/calvadoschristiandrouin\">Calvados Christian Drouin<\/a>).<\/strong><\/p>\n<p><strong>So why not becoming surprised by this versatile <em>eau-de-vie<\/em> which, unlike many other mouth alcohols, can vary and multiply the pleasures, without any risk of complex notes. Whether it is tasted pure, on ice, in a cocktail, in combination with a dish or as a simple ingredient constituting a recipe, Calvados would surely amaze you within its unequaled palette of flavors. Respecting the ancestral and natural <strong>fermentation<\/strong> lasting at least 28 days, the <strong>fruits<\/strong> proportions remain at the discretion of the producer, as long as their free will to distillate their <strong>juice<\/strong> whether in a <strong>column still<\/strong> or aged in <strong>wood barrels<\/strong>, for a minimum period of two years. Mostly produced in specific well-defined areas of <strong>Calvados<\/strong>, <strong>Orne<\/strong>, <strong>Eure<\/strong>, <strong>Mayenne<\/strong> and <strong>Sarthe<\/strong>, where an absolute know-how has been developed to reach this precious <strong>Calvados<\/strong> appellation. This is where that this <strong>fruity<\/strong> spirit is minimally matured between 2 and 3 years, to finally titrate at least 40% alcohol volume (photo credit:<strong>&nbsp;<a href=\"https:\/\/www.instagram.com\/pierrelucetpenato\/\">Pierre Lucet-Penato<\/a><\/strong>).<\/p>\n<p>Furthermore, <strong>Calvados<\/strong> proposes three appellations: <strong>Pays d&#8217;Auge<\/strong>, <strong>Calvados<\/strong> and <strong>Domfrontais<\/strong>. For each of them, and beyond the varieties of <strong>apple<\/strong> and <strong>pear<\/strong> trees, the type of <strong>orchard<\/strong> and related <strong>soil<\/strong>, on which these <strong>trees<\/strong> grow, have a real impact on the final result. For instance, apple <strong>orchards<\/strong> generally consist of at least 20% local <strong>apple<\/strong> varieties, whose are about 70% <strong>bitter<\/strong> or <strong>sweet bitter<\/strong> varieties, and a maximum of 15% <strong>acidulous<\/strong> species. Furthermore, with <strong>10 kg<\/strong> of apple, the average production results to around <strong>6L<\/strong>&nbsp;of <strong>cider<\/strong> or even a <strong>Calvados<\/strong> bottle of <strong>70 cl<\/strong>, at <strong>40% vol<\/strong>. In order to reach this noble <em>ratio<\/em>, the maximum density for planting trees is 250 plants per hectare of <strong>apple ciders<\/strong>, and 150 plants per hectare for <strong>pear trees<\/strong>. Please note that during <strong>harvesting<\/strong>, mechanical shaking of <strong>pear trees<\/strong> is prohibited. Adding to this fact, you&#8217;ve to learn that <strong>pear trees<\/strong> were historically planted around <strong>orchards<\/strong> to protect <strong>apple trees<\/strong>, notably due to their deeper and strong tree <strong>root system<\/strong>, for example in winter!<\/p>\n<p>In the other hand, the <strong>low-stem <\/strong>orchards, more contemporary, are exclusively dedicated to lead an intensive fruit production, whereas the <strong>apple trees<\/strong> produce their first <strong>apples<\/strong> after 5 years, for a life expectancy of 30 years. The maintenance of the <strong>orchard<\/strong> is done mechanically and the density is much higher (1000 feet of <strong>apple trees<\/strong> per hectare), for an average yield of 35 tons per hectare. Moreover, since a couple of years, a new alternative built on <strong>barrels<\/strong> of <strong>porto <\/strong>and <strong>madeira <\/strong>have been employed in order to launch new <strong>gustatory<\/strong> experiences. Among them, you could also count on the <strong>Blanche de Normandie<\/strong>, a real un-aged expression of this <strong>apple<\/strong> brandy (photo credits: <a href=\"http:\/\/www.facebook.com\/pg\/calvadoschristiandrouin\">Calvados Christian Drouin<\/a>).&nbsp;&nbsp;<\/p>\n<div>Thereafter, you would be happy to learn about the different types particularly distinguished by the category to which it belongs: <strong>blends<\/strong> or <strong>vintages<\/strong>.<\/div>\n<div>&nbsp;<\/div>\n<div>Blends are recognizable with some specific classifications, such as <strong>Fine<\/strong>, <strong>Extra<\/strong> and <strong>XO<\/strong>. Some labels specify an age which is that of the youngest <strong>brandy<\/strong> in the blend. Whereas, for the classification of their <strong>spirits<\/strong>, we know that <strong>Calvados<\/strong> producers refer to an age account, whose anniversary date is July 1st of each year. The age of a <strong>Calvados<\/strong> is determined by its date of distillation, possibly from single casks. This territory is particularly made up of shallow <strong>clay-limestone<\/strong> hillsides, above which a local production is especially composed with 70 to 100% of <strong>apples<\/strong> (the rest of <strong>pears<\/strong>). Adding to this, a natural <strong>fermentation<\/strong> lasts at least 42 days and continues with an old fashioned distillation, in an <strong>iron still<\/strong>, before a casual minimum <strong>aging<\/strong> period of two years.<\/div>\n<div>&nbsp;<\/div>\n<div>Thereafter, we learn more about the following <strong>Calvados<\/strong> extracted from the <strong>Domfrontais<\/strong>&#8216; appellation, as well concentrated in three departments: <strong>Orne<\/strong>, <strong>Manche<\/strong> and <strong>Mayenne<\/strong>, luckily privileged with a soil composed of <strong>granite<\/strong> and <strong>shale<\/strong>. The <strong>Domfrontais<\/strong> appellation meets some specific criteria, such as a more balanced mixture of <strong>apples<\/strong> and <strong>pears<\/strong> (at least 30% of <strong>perry<\/strong>). Mostly harvested between late <strong>September<\/strong> until <strong>December<\/strong>, nearly 200 varieties of <strong>apples<\/strong> may be used in the <strong>Calvados<\/strong> production, unless only about twenty of them are more regularly cultivated. Among them, there are four main types of <strong>cider apples<\/strong>: bitter, bittersweet, sweet and tart. <strong>Bitter<\/strong> apples are rich in tannins and provide structure to the final product, whereas the <strong>bittersweet<\/strong> ones bring fruity and richness and the <strong>sweet<\/strong> apples are mainly used for their contribution to the alcohol content of <strong>cider<\/strong>. Last but not least, the <strong>tartness<\/strong> stock provides the right amount of <strong>acidity<\/strong>. Once harvested, the fruits are stored in <strong>granaries<\/strong>, grouped into <strong>paloxes<\/strong> (large boxes of around 300 kg), or even on the <strong>ground<\/strong> for the ripening phase.<\/div>\n<div>&nbsp;<\/div>\n<div>At the moment of <strong>apples<\/strong> and <strong>pears<\/strong> ripening, then these fruits are crushed and pressed, before a final step called <strong>crumbling<\/strong>. This one is operated to collect the maximum amount of <strong>sugars<\/strong> and <strong>tannins<\/strong>, while soaking skins and fruit pulp in water and <strong>pressing<\/strong> them again, a very common technique among the <strong>cider houses<\/strong>. Thereafter, the juice would be ready for a natural <strong>fermentation<\/strong> to formally proceed, as much as possible according to the <strong>Norman<\/strong> tradition.<\/div>\n<div>&nbsp;<\/div>\n<div>Regarding this point, a tight <strong>AOC<\/strong> statement must be respected and along <strong>pears<\/strong>, these <strong>apples<\/strong> must also be produced locally, plus without any additives allowed by law, expressly after they would have been squeezed. Indeed, after the natural <strong>fermentation<\/strong>&nbsp;in tanks, between minimum 28 to 42 days, depending on the <strong>AOC<\/strong>.&nbsp;a part of the juice would become <strong>cider<\/strong> and the other finest portion would become the essential proper <strong>raw material<\/strong> for the next step, aka the distillation. This much expected <strong>session<\/strong> annually starts on July 1st, within two main distillation modes coexisting, within the specific <strong>AOC<\/strong> standards.&nbsp;<\/div>\n<div>&nbsp;<\/div>\n<div><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11018 alignright\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/06\/82586143_10156675723680143_2508517714138497024_o.jpg\" alt=\"\" width=\"416\" height=\"521\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/06\/82586143_10156675723680143_2508517714138497024_o.jpg 831w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/06\/82586143_10156675723680143_2508517714138497024_o-240x300.jpg 240w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/06\/82586143_10156675723680143_2508517714138497024_o-819x1024.jpg 819w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/06\/82586143_10156675723680143_2508517714138497024_o-768x960.jpg 768w\" sizes=\"auto, (max-width: 416px) 100vw, 416px\" \/>At first sight, the most common <strong>ironing still<\/strong>, symbolized by the illustrious <strong>ironing alembic<\/strong>, composed of <strong>copper<\/strong> to boil the <strong>cider<\/strong>, a heating part and finally a refrigerating <strong>copper coil<\/strong> to liquefy the remaining <strong>alcohol vapors<\/strong>. Used for the two distillations, this device is mandatory for the <strong>distillation<\/strong> processed in the previously cited <strong>Calvados Pays d&#8217;Auge<\/strong> appellation. For example, pictured here, the <strong>mobile still<\/strong>, property of <strong>Calvados Christian Drouin<\/strong>, settled in 1946 but now retired.<\/div>\n<div>&nbsp;<\/div>\n<div>The other alternative to be found, is a more contemporary <strong>column still<\/strong>, a &#8220;must have&#8221; in the <strong>Domfrontais<\/strong> area, again composed of a <strong>boiling<\/strong> function, completed by no less than fifteen <strong>trays<\/strong> to let the juice and its vapors melt and circulate, before reaching a <strong>condensation column<\/strong>.&nbsp;<\/div>\n<div>&nbsp;<\/div>\n<div>Once ready for the last <strong>aging<\/strong> phase where the future <strong>Calvados<\/strong> nectar would eventually stay between 2 and 3 years in ancestral <strong>oak barrels<\/strong> (no matter if they are <strong>new<\/strong> or <strong>used<\/strong>, refreshed or not with cider). Each <strong>barrel<\/strong> has its own chance, preferably those already made from second hand <strong>oak casks<\/strong>, already used for other <strong>spirits<\/strong> (wines, rum&#8230;), instead of recent <strong>wooden<\/strong> ones which are rather employed. Indeed, each <strong>cask<\/strong> gives to the <strong>Calvados<\/strong> its own flavors, along alcohol <strong>evaporation<\/strong> and <strong>oxydation<\/strong> also contribute to the complexity, thanks to complementary <strong>aromas<\/strong>&#8230; before the last dive in the more flavored <strong>used barrels<\/strong> (200 to 600 liters), for several years. Although some capacities, between 1000 liters of 10,000 liters, may still be used. This impetus was refreshed since 1960 when <strong>Christian Drouin<\/strong>, settled in the <strong>orchards<\/strong> and began to manufacture his own-named <strong>Calvados<\/strong>, plenty at his image.
