This time, we focus on the Rums coming from all over the world! A good occasion to clarify the operating forces, notably emanating from the emergence of new entrants, like India and Thailand who benefit from an ancestral tradition of the cultivation of sugar cane. However, the drawback was employed as bait by <strong>pirates<\/strong> to notably intoxicate the <strong>English Navy<\/strong> mosses, for recruitment purposes&#8230; Nowadays, this <strong>spirit<\/strong> is still linked to this rich past in adventures and sensational encounters (photo credits: <a href=\"https:\/\/www.instagram.com\/vintage.sugarcane.postcards\/\">Sugar Cane Vintage Postcards<\/a>).<\/p>\n<\/div>\n<div>&nbsp;<\/div>\n<div>\n<div>Starting from the illustrious <strong>sugar cane<\/strong>, originally discovered in <strong>Asia<\/strong> but brought back to <strong>Europe<\/strong> by pilgrims from the first <strong>Crusade<\/strong>, this <strong>white gold<\/strong> became then a rare <strong>commodity<\/strong>, very appreciated by the community. On another side, willing to become &#8220;<strong>sugar<\/strong> independent&#8221;, their <strong>Portuguese<\/strong> and the <strong>Spanish<\/strong> neighbors decided to settle a bunch of own <strong>plantations<\/strong> and <strong>refineries<\/strong> throughout their close colonies, from the <strong>Canary Islands<\/strong>, passing by <strong>Madeira<\/strong> until <strong>the Azores<\/strong>. That&#8217;s why <strong>Lisbon<\/strong> also quickly became an important <strong>sugar<\/strong> hotspot!<\/p>\n<\/div>\n<div>&nbsp;<\/div>\n<div>Thereafter, the discovery (and the <strong>European<\/strong> conquest) of <strong>America<\/strong> would further expand the production of <strong>sugar cane<\/strong>, especially under the <em>aegis<\/em> of the <strong>Portuguese<\/strong> navigators, excited at the idea to share their culture to <strong>Brazil<\/strong>. Before spreading throughout the whole South America, the <strong>Spanish<\/strong> army centered an other nerve centre in <strong>Cuba<\/strong>. Nevertheless, this <strong>sugar cane<\/strong> culture was not the monopoly of the <strong>Spanish<\/strong>, since the <strong>English<\/strong> and the <strong>French<\/strong> colons took the step to convert their proper Antilles territories, such as <strong>Martinique<\/strong>, <strong>Guadeloupe<\/strong>, <strong>Barbados<\/strong>, <strong>Jamaica<\/strong>&#8230;<\/p>\n<\/div>\n<\/div>\n<div>&nbsp;<\/div>\n<div>Whether it is called <strong>Rhum<\/strong> (for French Rum), <strong>Rum<\/strong> (English) or even <strong>Ron<\/strong> (Spanish), this sugar cane <strong>brandy<\/strong> remains a common cultural <em><strong>elixir<\/strong><\/em> spread from the <strong>Caribbean Islands<\/strong> and many other <strong>American<\/strong> countries, revealing so distinct shades between each proper way of <strong>production<\/strong>.<\/div>\n<div>&nbsp;<\/div>\n<div>\n<figure id=\"attachment_11363\" aria-describedby=\"caption-attachment-11363\" style=\"width: 450px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11363\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.22.13-300x190.png\" alt=\"\" width=\"450\" height=\"285\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.22.13-300x190.png 300w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.22.13.png 598w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><figcaption id=\"caption-attachment-11363\" class=\"wp-caption-text\">Oxen cart with sugar cane, Trinidad<\/figcaption><\/figure>\n<p>The popularity for this is getting so high that currently we count more than a hundred countries growing <strong>sugar cane<\/strong>, although foremost among them <strong>Brazil<\/strong>, <strong>India<\/strong> and <strong>China<\/strong>. The <strong>sugar cane<\/strong> then produced there, supplies more than the half of the world <strong>sugar<\/strong> production. According to its type of distillation and according to its aging, the rum displays a diversity of aromatic profiles which place it at the top of the bill of spirits.<\/p>\n<\/div>\n<div>&nbsp;<\/div>\n<div>Thereafter, the alleged gastronomical properties of <strong>sugar cane<\/strong> let this commodity to get employed for further purposes and trials, such as juice and for sure <strong>Rhum<\/strong>, supposedly born in the <strong>English<\/strong>-speaking island of <strong>Barbados<\/strong>, in the 17th century, where some <strong>Rum<\/strong> distilleries were gradually founded. The <strong>British<\/strong> made <strong>Rums<\/strong> are known to be heavier and more spicy, since they are mainly made from <strong>molasses<\/strong>, necessary to help navigators to resist during long and winding sea crossings!<\/p>\n<\/div>\n<div>&nbsp;<\/div>\n<\/div>\n<div>Then, you may find these <strong>Spanish<\/strong> influenced <strong>Rones<\/strong>, mostly produced in the islands of <strong>Cuba<\/strong>, the <strong>Dominican Republic<\/strong>, <strong>Puerto Rico<\/strong>, but also <strong>Guatemala<\/strong>, <strong>Panama<\/strong>, <strong>Nicaragua<\/strong>, <strong>Colombia<\/strong> and <strong>Venezuela<\/strong>. These <strong>Hispanic Rums <\/strong>are also made from <strong>molasses<\/strong> and distilled in <strong>column stills<\/strong>, allowing a very sweet taste, recalling the softness of this popular <strong>sugar cane<\/strong>.<\/div>\n<div>&nbsp;<\/div>\n<div>\n<figure id=\"attachment_11358\" aria-describedby=\"caption-attachment-11358\" style=\"width: 438px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11358\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.24.20-300x195.png\" alt=\"\" width=\"438\" height=\"284\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.24.20-300x195.png 300w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.24.20.png 598w\" sizes=\"auto, (max-width: 438px) 100vw, 438px\" \/><figcaption id=\"caption-attachment-11358\" class=\"wp-caption-text\">Distillery in the Reunion Island<\/figcaption><\/figure>\n<p>Without forgetting the <strong>French<\/strong>-speaking territories (more detailed on our late <a href=\"https:\/\/francevisiting.com\/index.php\/2020\/03\/30\/french-can-also-produce-good-quality-rum-find-them-in-rhum-fest-paris\/\"><strong>article<\/strong><\/a> here) and their differently spelled <strong>Rhums<\/strong>, nowadays the only ones to be provided with a legal framework (like usually in <strong>France<\/strong>), regulating their production and <strong>appellations<\/strong>. These overseas islands from the <strong>West Indies <\/strong>stand out this time, with their agricultural <strong>Rum<\/strong>, made from an efficient <strong>fermentation<\/strong> and <strong>distillation<\/strong> issued from pure <strong>cane juice<\/strong>, unlike the offset <strong>Reunion Island<\/strong>, lonely nested in the <strong>Indian Ocean<\/strong>, also produces <strong>Grands Ar\u00f4mes<\/strong> styled <strong>Rhums<\/strong>, rather based on an obvious <strong>British<\/strong> style. Along another <strong>Reunion<\/strong>&#8216;s speciality, the alternative <strong>spiced Rums<\/strong>, as well baptized <strong>Arranged Rums<\/strong>, since these <strong>spirits<\/strong> result from the maceration (during a minimum of 3 months) of <strong>spices<\/strong>&nbsp;and <strong>aromatics<\/strong> in a <strong>white Rum<\/strong>, thus offering a long list of natural <strong>flavors<\/strong>, made to satisfy any preference.<\/p>\n<\/div>\n<div>&nbsp;<\/div>\n<div>\n<div>\n<figure id=\"attachment_11362\" aria-describedby=\"caption-attachment-11362\" style=\"width: 438px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-11362\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.23.00-300x198.png\" alt=\"\" width=\"438\" height=\"289\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.23.00-300x198.png 300w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.23.00.png 599w\" sizes=\"auto, (max-width: 438px) 100vw, 438px\" \/><figcaption id=\"caption-attachment-11362\" class=\"wp-caption-text\">Vesou (cane juice) fermentation in Guadeloupe<\/figcaption><\/figure>\n<p>So apart the <strong>French<\/strong> regulation, there is no strict <strong>legal framework<\/strong>, regarding the aging of <strong>Rum<\/strong> and its related appellations, in the other countries&#8230; Therefore, each method and for sure <strong>gustative <\/strong>notes may vary, from one producer to another. That&#8217;s why, of all the spirits, this <strong>brandy<\/strong> is certainly the one that offers the widest range of <strong>tasting<\/strong> possibilities. A traditional <strong>Rum<\/strong> may also either be produced from <strong>cane juice<\/strong> or <strong>molasses <\/strong>(also called <strong>industrial Rum<\/strong>, made from a residue of <strong>sugar cane<\/strong>, after concentration of the <strong>juice<\/strong> by heating and elimination of impurities). Thus, if <strong>white Rums<\/strong> (often kept in stainless <strong>steel tanks<\/strong> or <strong>casks<\/strong> for several weeks, in order to round off their <strong>aromas<\/strong>) are more often acclaimed in the development of <strong>cocktails<\/strong>, such as some fragrant <strong>Rums<\/strong>, especially from <strong>Cuba<\/strong>, exactly made to match its aromas with <strong>fruit juice<\/strong>.<\/p>\n<figure id=\"attachment_11356\" aria-describedby=\"caption-attachment-11356\" style=\"width: 434px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-11356\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.25.14-240x300.png\" alt=\"\" width=\"434\" height=\"543\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.25.14-240x300.png 240w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-04-a\u0300-15.25.14.png 477w\" sizes=\"auto, (max-width: 434px) 100vw, 434px\" \/><figcaption id=\"caption-attachment-11356\" class=\"wp-caption-text\">Rhum column still, in Martinique<\/figcaption><\/figure>\n<p>Nonetheless, some other white <em><strong>elixirs<\/strong><\/em> even offer such an <strong>aromatic<\/strong> complexity that they better be appreciated alone, among them note some <strong>Jamaican<\/strong> white rums, however made from <strong>molasses<\/strong>, but distilled in <strong>ironing stills<\/strong>, provide a unique touch. In an other hand, <strong>amber Rums<\/strong> (commonly matured during 18 months in <strong>Bourbon<\/strong> aged <strong>oak barrels<\/strong>, also colored by the presence of <strong>caramel<\/strong>) are more dedicated to be pure <strong>tasted<\/strong>, particularly in a <strong>Cognac<\/strong>-type glass.<\/p>\n<\/div>\n<div>One last technical point to mention, the <strong>Impurity Level<\/strong> (TNA) is also important. Indeed, the higher it is, the more <strong>aromatic<\/strong> would be the <strong>Rum<\/strong> and therefore the more <strong>flavors<\/strong> would disseminate from the bottle, deserving the <strong>juice<\/strong> to be tasted pure rather, instead than in a cocktail. In this category, white <strong>agricultural Rums<\/strong> (then obtained by distillation of fresh <strong>sugarcane juice<\/strong>) are more concerned by this fact, whose you should have a closer look on the <strong>French<\/strong> overseas <strong>Rhums<\/strong>, where the <strong>traditional<\/strong> term applies to their <strong>Rhums<\/strong>, only embodied with this <strong>Impurity Level<\/strong> (TNA) equal to or greater than 225 g\/PAH. By the way, if they are kept at least 3 years in <strong>oak barrels<\/strong>, they could be granted with the <strong>Old Rum<\/strong> appellation.<\/div>\n<div>\n<p>Among these traditional <strong>Rums<\/strong>, there are also other categories you could find, depending on the manufacture.<\/p>\n<div>For instance, in the <strong>Tasting Rums<\/strong> category, the <strong>Dark Rum<\/strong> comes from an aging of <strong>2 years<\/strong> and more, in <strong>oak barrels<\/strong>.
