It&#8217;s not a secret that the legendary Absinth spirit had its heyday in the 19th century. Lauded and elevated to the rank of &#8220;green muse&#8221; by the artistic world, which also resulted to be baptized the Green Fairy. Victim of its own success, its consumption quickly spread among popular social strata, giving rise to an informal daily meeting in bars and bistros, called &#8220;green hour&#8221; (photo credit: <a href=\"https:\/\/www.instagram.com\/larissacook\/\">Larissa Cook<\/a>).<\/strong><\/p>\n<p><strong>Like many other European cities, Paris was the theater of all excesses, but also the cradle of a new marginal way of life, maintained by a community of artists which gave birth to a cultural current, called &#8220;Bohemian&#8221;. Described by its detractors and prohibitionist movements, Absinthe was condemned in many countries, including France in 1915. In reality, the lobby of several winegrowers, who were suffering from a terrible <em>phylloxera<\/em> crisis, wanted to eradicate the Green Fairy with many advertising campaigns, to tell its harmful. The distilleries had to wait until 1988, that the consumption of Absinthe became legal again in Europe, under the guise of controlling its level of thujone, the molecule at the origin of its controversy. Furthermore, this <strong>spirit<\/strong> is also highly recommend to be diluted with water, otherwise you may opt as well for the ceremonial of melting some sugar on a spoon, although consuming emanates from the <strong>Czech Absinthes<\/strong>, back in the 1990 years (photo credit: <a href=\"https:\/\/www.instagram.com\/elvelly_herbal_clinic\/\">Elvelly Herbal Clinic<\/a>).<\/div>\n<div>&nbsp;<\/div>\n<div>At the origin, the <strong>Absinthe<\/strong> plant has been muchly used since <strong>Antiquity<\/strong>, especially for its <strong>medicinal<\/strong> virtues.&nbsp;<\/div>\n<div>Time passing by, it slowly turned into a transformed <strong>remedy<\/strong> developed by the <strong>French<\/strong> doctor <strong>Pierre Ordinaire<\/strong>, who initially exiled to <strong>Couvet<\/strong>, in <strong>Switzerland<\/strong>, during the <strong>French Revolution<\/strong>, about thirty kilometers distant from the future main wormwood city of <strong>Pontarlier<\/strong>.&nbsp;<\/div>\n<div>Then, this natural <strong>drug<\/strong> would eventually become an <strong>aperitif<\/strong>, after the recipe has been bought by the <strong>Major Dubied<\/strong>, in partnership with <strong>Henri-Louis Pernod<\/strong>, in order to develop the first of the <strong>Pontarlier<\/strong> distilleries, back in 1805. Step by step, <strong>Absinthe<\/strong> massively took off thanks to soldiers returning from <strong>French<\/strong> colonies, where they consumed this beverage to purify the water. <strong>Absinthe<\/strong> then became a trendy universal aniseed <strong>aperitif<\/strong>, since nearly all social classes fell under its spell, particularly during a consumption ritual usually settled from 5 pm.<\/div>\n<div>&nbsp;<\/div>\n<div><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11431 alignright\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-15.56.18-300x300.png\" alt=\"\" width=\"389\" height=\"389\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-15.56.18-300x300.png 300w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-15.56.18-150x150.png 150w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-15.56.18.png 594w\" sizes=\"auto, (max-width: 389px) 100vw, 389px\" \/>Indeed <strong>thujone<\/strong> is a molecule often found in <strong>Absinthe<\/strong>, and was supposed to drive people crazy. Since it was particularly appreciated for its <strong>digestive<\/strong> properties and its <strong>menthol<\/strong> aroma, unless it sometimes caused convulsive disorders and eventually feelings of <strong>disinhibition<\/strong> or even, in large doses, <strong>hallucinations<\/strong>.<\/div>\n<div>Despite the fact that the risk of causing <strong>convulsions<\/strong> was pretty low, once it would require a concentration more than 1000 times higher than the quantity present in actual <strong>Absinthe<\/strong>.&nbsp; Along the rumored <strong>hallucinogenic<\/strong> effects of <strong>Absinth<\/strong>, it seems that they result from a random disordered combination of different molecules from the different <strong>herbs<\/strong> used. Among them, we may count <strong>anethole<\/strong> for <strong>anise<\/strong>, <strong>fenchone<\/strong> coming from <strong>fennel<\/strong> and <strong>pinocamphone<\/strong> extracted from <strong>hyssop<\/strong> (photo credit: <a href=\"https:\/\/www.instagram.com\/farmershane\/\">Shane Trevena<\/a>).<\/div>\n<div>&nbsp;<\/div>\n<div>Regarding the current level of <strong>thujone<\/strong> present in traditional <strong>Absinthes<\/strong>, it meets limitations depending on the country, must be less than 50 mg\/liter in <strong>European Union<\/strong>, still far less than the usual level between 250 and 300 mg per liter, during the <strong>Golden Era<\/strong>. Moreover, the common <strong>distillation<\/strong> would also not allow this molecule to pass through <strong>alcohol<\/strong> vapors.<\/div>\n<div>&nbsp;<\/div>\n<div>That&#8217;s why only <strong>Absinthes<\/strong> made from a mixture of large <strong>absinthe<\/strong> essential <strong>oils<\/strong> and <strong>alcohol<\/strong> could have contained a high concentration of <strong>thujone<\/strong>, unless we just have learned for ten years that the strong absorption of this <strong>molecule<\/strong> was not responsible for symptoms related to consumption of <strong>Absinthe<\/strong>. It was apparently mostly due to the abuse of strong <strong>alcohol<\/strong> (combined for some with <strong>opium<\/strong> or other <strong>drugs<\/strong>)<\/div>\n<div>&nbsp;<\/div>\n<div><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11445 alignright\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-16.58.13-300x300.png\" alt=\"\" width=\"388\" height=\"388\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-16.58.13-300x300.png 300w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-16.58.13-150x150.png 150w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-16.58.13.png 599w\" sizes=\"auto, (max-width: 388px) 100vw, 388px\" \/>Since the revival in 1988, a roundabout way of reintroducing <strong>Absinthe<\/strong> in <strong>France<\/strong>, under the way of &#8220;spirit drink with <strong>absinthe<\/strong> plants&#8221;, <strong>Absinthe<\/strong> is now considered as a strong alcoholic <strong>liquor<\/strong> obtained from a mixture of alcohol and distilled <strong>herbs<\/strong> or herbal <strong>extracts<\/strong>. By the way, the alcohol base can either be a <strong>beet<\/strong> or <strong>grape<\/strong> brandy. In <strong>France<\/strong>, quality <strong>Absinthes<\/strong> are even made from a <strong>wine<\/strong> brandy. Then, the basis would be completed by the legendary <strong>great absinthe<\/strong> and <strong>green anise<\/strong> botanicals, also most often added by three others aromatic herbs, such as <strong>hyssop<\/strong>, <strong>sweet fennel<\/strong> and <strong>Roman absinthe<\/strong> also called <strong>small absinthe<\/strong>. For your information, other herbs could complete this trio, counting on <strong>star anise<\/strong>, <strong>lemon balm<\/strong>, <strong>angelica root<\/strong> and also a wedding of <strong>spices<\/strong> such as <strong>juniper<\/strong>, <strong>coriander<\/strong>, <strong>speedwell<\/strong> and <strong>nutmeg <\/strong>(photo credit: <a href=\"https:\/\/www.instagram.com\/obsinthe\/\">Obsinthe<\/a>).<\/div>\n<div>&nbsp;<\/div>\n<div>On top of that statement, it&#8217;s important to notice that the quality of these <strong>herbs<\/strong> are notably linked to the climate, the fertility of the soil, the cultivation, plus some complementary <strong>harvesting<\/strong> techniques. From the traditional <strong>Absinthe<\/strong>, requiring a maceration step, completed by a distillation, passing by the modern <strong>Absinthe<\/strong> production style. In favor of the blending of alcohol, either including natural or synthetic <strong>absinthe<\/strong> flavors and color. Moreover since these types of <strong>Absinthes<\/strong> already existed before 1915 (photo credit: <a href=\"https:\/\/www.instagram.com\/linstanttchalon\/\">L&#8217;Instant T Chalon<\/a>).<\/div>\n<div>&nbsp;<\/div>\n<div>Indeed, it could either happen by mixing, similar to certain <strong>Gins<\/strong>, since alcohol may be blended with aromas of <strong>absinthe <\/strong>plant.<\/div>\n<div>&nbsp;<\/div>\n<div>Otherwise, the other way is by <strong>distillation<\/strong>, since traditional <strong>Absinthes<\/strong> come from maceration, then from distillation, starring <strong>herbs<\/strong> used in their composition. The <strong>maceration<\/strong> stage is carried out in a tank where the alcohol (85%) and a mixture of plants are stored for several days. At the end of this stage, the liquid is <strong>filtered<\/strong>, then reduced with water, before being placed in the still&#8217;s boiler for distillation. This <strong>distillation <\/strong>method implies that the heads and tails are separated, and that only the <strong>heating core<\/strong> is kept. This method produces qualities of <strong>Absinthes<\/strong> much superior to those obtained by the previous <strong>mixing<\/strong> process.&nbsp;<\/div>\n<div>&nbsp;<\/div>\n<div><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11446 alignright\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.00.24-240x300.png\" alt=\"\" width=\"386\" height=\"483\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.00.24-240x300.png 240w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.00.24.png 479w\" sizes=\"auto, (max-width: 386px) 100vw, 386px\" \/>After the <strong>filtration<\/strong> step, absinthe may be bottled, while its approximately 75% <strong>alcohol<\/strong> degree, being reduced with water (regarding <strong>white<\/strong> or <strong>blue<\/strong> <strong>Absinthe<\/strong>) or aged in <strong>casks<\/strong>.<\/div>\n<div>&nbsp;<\/div>\n<div>Adding to this, a <strong>coloring touch<\/strong>, natural or artificial, is frequent in the production of this <strong>spirit<\/strong>. As part of natural coloring, a final <strong>maceration<\/strong> phase is carried out after <strong>distillation<\/strong>. As long as traditional <strong>Absinthes<\/strong> get their color from the <strong>chlorophyll<\/strong> pigment, present in different <strong>herbs<\/strong> such as <strong>hyssop<\/strong>, <strong>lemon balm<\/strong> and <strong>small absinthe<\/strong>. During this maceration phase, the alcohol takes on a slight <strong>green color<\/strong> and gains in <strong>aromatic<\/strong> complexity. This is called <strong>green absinthe<\/strong>, although a <strong>red<\/strong> color can be obtained by using <strong>hibiscus<\/strong> flowers. By the way, this <strong>chlorophyll<\/strong> inside the solution, is indeed very <strong>fragile<\/strong>, since when exposed to light, it usually could gradually switch from <strong>green<\/strong> to <strong>yellow<\/strong> color, and even sometimes turn to <strong>amber<\/strong>. Unless the contemporary natural productions are less victims of this side effect, many of them are thus nowadays sold in <strong>opaque bottles<\/strong>. Whereas artificially colored <strong>Absinthes<\/strong> are much more stable at this point.&nbsp;<\/div>\n<div>&nbsp;<\/div>\n<div>Another important fact to mention, there were originally five main categories of <strong>Absinthe<\/strong>, those could have been either <strong>ordinary<\/strong>, <strong>semi-fine<\/strong> (both artificially colored, with a blend of neutral alcohol and natural essences), <strong>fine<\/strong>, <strong>superior<\/strong> and <strong>Swiss<\/strong> (both distilled, offering a better quality and natural color). It&#8217;s not a secret that these last categories may differ according to their <strong>alcoholic<\/strong> strength and the quality of the <strong>absinthe<\/strong> plant, but are now obsolete with the new rules.&nbsp;<\/div>\n<div>&nbsp;<\/div>\n<div><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11448 alignright\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.03.58-206x300.png\" alt=\"\" width=\"385\" height=\"561\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.03.58-206x300.png 206w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.03.58.png 407w\" sizes=\"auto, (max-width: 385px) 100vw, 385px\" \/>Indeed nowadays, a real distinction needs to be made between <strong>mixed<\/strong> <strong>Absinthes<\/strong> (modern ones, resulting from the mixture of the essence of <strong>absinthe<\/strong> with a neutral alcohol) and <strong>distilled Absinthes<\/strong> (traditional ones).<\/div>\n<div>&nbsp;<\/div>\n<div>These <strong>distilled<\/strong> drinks may either be <strong>green<\/strong> or <strong>blue<\/strong>. The <strong>green<\/strong> versions are in fact, white <strong>Absinthes<\/strong> colored this way, within a final maceration melting <strong>herbs<\/strong>, naturally giving its color and a more complex taste.&nbsp;<\/div>\n<div>In the other hand, the <strong>blue<\/strong> (or <strong>white<\/strong>) versions, often referring to <strong>Swiss Absinthes<\/strong>, are <strong>colorless<\/strong> due to their distillation and bottled at a high alcohol level (photo credit: <a href=\"https:\/\/www.instagram.com\/miss.p.bee\/\">Miss Mobile Klick<\/a>).<\/div>\n<div>&nbsp;<\/div>\n<div>Last but not least, how to appreciate your favorite&nbsp; <strong>Absinthe<\/strong>? In fact, this spirit may be considered as one of the more ritualistic, so much that this <strong>Green Fairy<\/strong> follows an ancestral guideline, somehow fostering its legend. Thus, pure <strong>Absinthe<\/strong> shall be poured through a perforated flat spoon called &#8220;<strong>Absinthe spoon<\/strong>&#8221; topped with a piece of <strong>sugar<\/strong>. The latter is very gently sprinkled with ice water, most of the time flowing from a designed <strong>Absinthe fountain<\/strong>, until this sugar cube may be completely dissolved in your glass.&nbsp;<\/div>\n<div>For your information, the regular role of <strong>sugar<\/strong> is to reduce the natural bitterness inherent in any traditional <strong>Absinthe<\/strong>, due to the presence of <strong>absinthine<\/strong> molecule in any <strong>green nectar<\/strong>. For a 68% dose of <strong>wormwood<\/strong>, three to four doses of water are required.&nbsp;<\/div>\n<div>Although <strong>Absinthe<\/strong> can also be consumed throughout many other ways, either with <strong>white wine<\/strong> (to replace water), without sugar, with <strong>anise<\/strong>, <strong>gum<\/strong> or <strong>orgeat syrup<\/strong>&#8230;<\/div>\n<div>\n<hr>\n<\/div>\n<div><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11452 alignright\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.13.13-254x300.png\" alt=\"\" width=\"384\" height=\"454\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.13.13-254x300.png 254w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.13.13.png 508w\" sizes=\"auto, (max-width: 384px) 100vw, 384px\" \/>We start our <strong>Absinthe<\/strong> tour with one of the most illustrious <strong>French<\/strong> houses. The <a href=\"https:\/\/www.pontarlier-anis.com\"><strong>Distillerie Guy<\/strong><\/a> was founded in <strong>1890<\/strong> by <strong>Armand Guy<\/strong>, then aged 20, when he arrived in <strong>Pontarlier<\/strong>, the capital of <strong>Absinthe<\/strong>. Much influenced by another huge branch player the <strong>Vichet<\/strong> distillery, then establishing its distillery just upon an underground source. Another sign of destiny, the proximity to a <strong>military<\/strong> camp, where the soldiers contributed to spread this <strong>Absinthe<\/strong> know-how, while bringing it through their worldwide operations.&nbsp;<\/div>\n<div>&nbsp;<\/div>\n<div>These were the good old golden hours of <strong>Absinthe<\/strong>, causing a formidable regional economic boom. As well as at a time when <strong>Pontarlier<\/strong> counted no less than 23 <strong>distilleries<\/strong> and even 150 <strong>bars<\/strong>, just for a population counting 10,000 inhabitants, including nearly 3,000 people employed in the cultivation and the <strong>Absinthe<\/strong> industry. This flourishing situation lasted until the unfortunate <strong>Absinthe<\/strong> ban started to occur in 1915. Indeed, following a desire of the government to fight against alcoholism, <strong>Absinthe<\/strong> was banned in <strong>France<\/strong>, after having been banned in <strong>Switzerland<\/strong>, the <strong>United States<\/strong> and <strong>Belgium<\/strong>.<\/div>\n<div>&nbsp;<\/div>\n<div>By the way, the period of time from the ban on <strong>Absinthe<\/strong> would eventually permit to revive the renewal of <strong>anise<\/strong> aperitifs, but also a myriad of new <strong>spirits<\/strong>, which were mostly born post-war to imagine all kinds of <strong>liquors<\/strong>.&nbsp;<\/div>\n<div>&nbsp;<\/div>\n<div><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11451 alignright\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.13.42-300x298.png\" alt=\"\" width=\"382\" height=\"379\" srcset=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.13.42-300x298.png 300w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.13.42-150x150.png 150w, https:\/\/francevisiting.com\/wp-content\/uploads\/2020\/07\/Capture-d\u2019e\u0301cran-2020-07-14-a\u0300-17.13.42.png 599w\" sizes=\"auto, (max-width: 382px) 100vw, 382px\" \/>Thus, once conceived in this <strong>distillery<\/strong>, thanks to a whole range of plants and fruits, notably found in their family <em>grimoire<\/em>.
