After being the first Savoy establishment ever, to be awarded of these 3 precious stars in from the Michelin Guide, the Relais & Ch\u00e2teaux La Bouitte Hotel, located in Saint Martin de Belleville has just been in 2020, granted of another deserving prize, the Entreprise du Patrimoine Vivant (EPV) label.<\/strong><\/p>\n

This label aims to recompense a couple of emblematic French companies, which do their best to share their traditions’ heritage throughout the World, while keeping a certain attachment to their territory. Especially associated with a region, where traditions, creativity and innovation come together. Indeed, this is a real mark of recognition, attributed by the Institut National des M\u00e9tiers d’Art (INMA), with a specific recognition towards these national structures paying many efforts in terms of promotion of artisanal or industrial know-how of excellence, along the passion of an entire team or family.<\/strong><\/p>\n

Thus, this previous concern is really the case here since La Bouitte Hotel is an authentic family affair, started in 1976 by Ren\u00e9 Meilleur, a true native from Savoy. Also an autodidact, like his son Maxime who joined him in 1996, they became an inseparable and fusional duo. Strong of this symbiosis, they developed a concept around premium gastronomy and hospitality, in order to publicize a certain Alpine lifestyle and more precisely an ancestral Savoyard way of life. A concept also honored by the Grandes Tables du Monde<\/a> association.<\/strong><\/p>\n

Furthermore, this scope extends from the picturesque pastures and hamlets of Saint-Martin-de-Belleville until the glaciers of the Vanoise, the duet of cultural and culinary conductors are glad to show their inspiration from the mountains, pastures, rivers and even high-altitude lakes, forming a succession of breathtaking landscapes. <\/strong><\/p>\n

It’s not anymore a secret that once you immerse yourself into La Bouitte, you feel the spirit of a bygone time, when villagers endured many months of winter and a complex land to cultivate but enjoyed life in the mean time, expressly thanks to the power of their social traditions. If you get along among these several typical villages around this Belleville Valley, at the gates of the Vanoise Park, you would know more about this rich artisanal legacy, left by the ancestral practices, and especially the Baroque art. This style needs to be illustrated with the<\/strong> nearby Notre-Dame de la Vie sanctuary, one of the 36 churches and chapels in the valley which in the 17th and 18th centuries were adorned in this Baroque style. Nestled in the heart of the so colorful Baroque routes<\/strong> of Savoy<\/strong>, and more precisely in the hamlet of Saint Marcel<\/strong>, on the heights of Saint Martin de Belleville<\/strong>, the La Bouitte<\/strong> Hotel<\/strong><\/a> opens its doors to you, summer and winter. Indeed, starting from this statement, Ren\u00e9 Meilleur <\/strong>decided after a diner in 1981, at Paul Bocuse<\/strong>‘s Michelin <\/strong>restaurant, to upgrade his own establishment. This turning quickly operated in the early 80s and it needed no less than 3 years to reach his cruising speed and a regional notoriety<\/strong>, mostly helped by its central location!<\/p>\n

As a matter of fact, La Bouitte Hotel<\/strong><\/a> is not in the center of a mainstream ski resort<\/strong> (that could be so common in the Alps) but is easily accessible from the closest train station of Mo\u00fbtiers<\/strong> and a regional shuttle<\/strong> is also working all year long. Situated at the starting point of the 3 Vall\u00e9es<\/strong> ski area, notably thanks to a direct cable car<\/strong>, you would have the choice to reach then in twenty minutes, one of the best ski runs<\/strong> of the World! This juice<\/strong> exactly matches with the following tasty appetizers<\/strong>, naturally prepared by the Chefs<\/strong>!<\/p>\n

Therefore, you could appreciate a trio of jewels<\/strong>, composed a duo made of some crispy mortadella<\/strong>, completed by mustard seed<\/strong> in order to spice up the gribish<\/strong> sauce.<\/p>\n

The first has been infused with hay<\/strong>, noticeably and gently evaporating in your palate, followed by a semi-cooked<\/strong> butter<\/strong> enriched with a pronounced color and personality, before a final butter<\/strong> stuffed with some serac<\/strong> cheese (also called brocciu<\/em> in Corsica<\/strong>) which, by its creamy and airy texture, lightens this selection.<\/p>\n

This butter<\/strong> needs to be covered with a traditional knife (especially created by the factory of St\u00e9phane Thomas<\/strong>) on one of the different homemade breads<\/strong>, extracted from the cart<\/strong>. In this amazing wooden vehicle, we find mashed potato<\/strong>, corn<\/strong> or even sourdough<\/strong> bread, along a traditional baguette<\/strong><\/em>.<\/p>\n

After your choice in the wide menu<\/strong>, offering four discovery formulas, ranging from 169\u20ac for three courses<\/strong> until 335\u20ac for eight courses<\/strong> including cheese<\/strong>, where of course the local inspiration is brought to the fore.<\/p>\n

For instance, the real introduction was lead with the Lo Corti<\/strong> (a translation of “small garden”), presenting a variety of mini vegetables<\/strong> raised by the expert market gardener \u00c9ric Roy<\/strong><\/a>, based in Touraine<\/strong> and acclaimed by many famous Chefs<\/strong>. In order to showcase these different unique vegetal species<\/strong>, in miniature format, and with a unique similar taste<\/strong>, a bucket of cut leaves of angluche<\/strong> (sour), whose slightly tangy flavor, was considered a thirst quencher by the Savoyards<\/strong>. To accompany this ensemble, a typical double cream from the Gruy\u00e8re<\/strong> region, embellished with alibeche<\/strong><\/em> and skillfully dosed with a hint of lemon<\/strong>, from Michel Bach\u00e8s<\/strong><\/a>, the master of citrus<\/strong> fruits, located in Perpignan<\/strong>.<\/p>\n

For your information, many of the other vegetables come from the fine selection of Jean-Luc Botti<\/strong><\/a>, one of the best workers in France<\/strong>. To find also in the upcoming lacustrine<\/strong> touch with lavaret<\/strong> (or f\u00e9ra<\/em>), a sort of freshwater whitefish<\/strong>, coming straight from the Lake Bourget<\/strong>. In this case, two pieces arranged like two magnets<\/strong>, seasoned with a butter<\/strong> sauce and Roussette<\/strong> wine from Savoy<\/strong>. Then, another bundle of pickles<\/strong>, once again arriving from the Eric Roy<\/strong>‘s vegetable garden. All rolled up again with lavaret<\/strong>, this creation reserves a tapered surprise, starring cubes of lemon<\/strong> and tagete<\/strong> (marigold).<\/p>\n

Thereafter, a meat dish, mentioning a surprising sweetbread<\/strong> from St\u00e9phane Milleret<\/strong> in Chamb\u00e9ry<\/strong>, smoked with beech <\/strong>in a cloche<\/strong><\/em>, paired with a rosette<\/em><\/strong> composed of agria<\/strong> potatoes<\/strong> and arna bacon<\/strong> from Aosta<\/strong>, topped with a bunch of garlic<\/strong> scapes. Thus, a very light and fruity plum water<\/strong>, brewed like a beer and an emulsion, perfectly accompanied by a plum crunch<\/strong>.<\/p>\n

Finally, a very surprising dessert<\/strong>… baptized “Le Lait Dans Tous Ses \u00c9tats”<\/strong> (The Milk), another essential asset of this House<\/strong>. A surprising and as well aesthetic structure, for a completely dairy<\/strong> sweetness, revisited in all its forms. In particular through a frosted tile with sheep<\/strong>‘s milk, meringues<\/strong>, surrounding a milk<\/strong> foam mixed with milk ice cream<\/strong>, and the ultimate sweet note… a milk jam<\/strong> coulis, cooked like a caramel. <\/p>\n

On top of that, don’t miss the regular wine tasting<\/strong> evenings, organized throughout all seasons. They are definitely a real opportunity to meet talented winegrowers<\/strong> and their creations, while exploring an original tailored menu<\/strong>, offered by our two Chefs<\/strong>.<\/p>\n

In summary, a gourmet<\/em><\/strong> palette of many senses to discover and even in the kitchens, if you ask for a quick visit! Prior a more intimacy moment with an herbal tisane<\/strong>, freshly picked up from the garden and the mountain by Maxime Meilleur<\/strong><\/a>, to enjoy close to the artificial firehouse<\/strong>, in the salon <\/strong>and close to a peasant loggia<\/em><\/strong>. Thus, no risk for the kids to burn themselves, whereas they should have a deeper taste on the Cruche<\/strong>, a typical Savoyard<\/strong> candy to accompany this tisane time<\/strong>, made of butter, wheat and sugar. Once again, you must be amazed by these various homemade sweets<\/strong> proposed on this original wooden low tables<\/strong>, of orange blossom<\/strong> flavored mushrooms<\/strong>, along Savoyard<\/strong> and mellow rissoles<\/em><\/strong>, or pine tree<\/strong> flavored chocolate<\/strong> served in a pine cone<\/strong> shape.
