For instance, the aim of the <em><strong>Livre des Calvados<\/strong><\/em> is to contribute to a better knowledge of this prestigious <strong>Norman<\/strong> brandy by trying to answer the recurring questions that any random <strong>professionals<\/strong> and <strong><em>amateurs<\/em><\/strong> ask themselves about how is produced and what are the origins of <strong>Calvados<\/strong>? (photo credits: Christian Drouin)<\/p>\n<p>In another way, most of you would like to know as well who are the <strong>producers<\/strong>, plus what&#8217;s the best way to select and consume this <strong>spirit<\/strong>. Since <strong>Calvados<\/strong> has been identified in many variations and playing many symbolic roles, essentially in social, political and economic <strong>purposes<\/strong>, since its appearance at the end of the <strong>Middle Ages<\/strong>, its <strong>history<\/strong> would have no mystery to you anymore. Indeed, the <strong>Prohibition<\/strong> played an important role for the popularity of <strong>Calvados<\/strong> in the <strong>United States<\/strong>, since the <strong>American<\/strong> production of <strong>Apple Jack<\/strong> nearly disappeared and <strong>Calvados<\/strong> replaced especially in various <strong>recipes<\/strong>. In this case, also discover the secrets of some easy-to-prepare <strong>cuisine<\/strong>&nbsp;and <strong>cocktail<\/strong> recipes, scaling from great <strong>classics<\/strong> to those of contemporary <strong>mixology<\/strong>.<\/p>\n<p>At the occasion of the reading, you would notably observe that there are no less than 220 varieties of <strong>apples<\/strong> authorized for the conception of <strong>Calvados<\/strong> in <strong>Normandy<\/strong> but only 35 have been selected by <strong>Christian Drouin<\/strong> for his own <strong>spirits<\/strong>.<\/p>\n<p>First of all, one of the reasons of this choice, is the fact that we may consider a matter of <strong>risk management<\/strong> since there are still days of <strong>frost<\/strong> and tree <strong>diseases<\/strong> that could be slowed down by the variety of <strong>orchards<\/strong>. While knowing that unlike <strong>vines<\/strong>, the <strong>apple<\/strong> harvest is more flexible and can be spread over two months. In addition, <strong>apple trees<\/strong> alternate and produce every other year, with a graduation between <strong>bitterness<\/strong> and <strong>sweetness<\/strong> of the fruits, depending of the species.<\/p>\n<figure id=\"attachment_25676\" aria-describedby=\"caption-attachment-25676\" style=\"width: 448px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-25676\" src=\"https:\/\/francevisiting.com\/wp-content\/uploads\/2021\/11\/150932347_10157671150325143_6320211243498448133_n-300x225.jpeg\" alt=\"\" width=\"448\" height=\"336\"><figcaption id=\"caption-attachment-25676\" class=\"wp-caption-text\">This <em><strong>&#8220;Chauffe-cidre&#8221;<\/strong><\/em> operated on the highest part of the pot still. Pursuing this <strong>responsible<\/strong> philosophy, you may find in their <strong>apple<\/strong> <strong>trees<\/strong>, a couple of <strong>nesting<\/strong> boxes for <strong>chickadees<\/strong> that enjoy feeding on <strong>insects<\/strong> and even situated not far from <strong>beehives<\/strong>. In addition, no <strong>chemical<\/strong> intervention is necessary for the maintenance of <strong>orchards<\/strong>, which makes the <strong>soils<\/strong> very natural. A work of global <strong>naturalness<\/strong> which is generally more complicated to practice for the <strong>vines<\/strong>. Without forgetting that this natural <strong>benefit<\/strong> which particularly appeals to <strong>cows<\/strong>&#8216; appetite which wander between <strong>apples<\/strong> and love to delight and crunch into the first <strong>apples<\/strong> that have fallen to the ground and seem to stand as most of the time as quite <strong>glassy<\/strong>.<\/p>\n<p>The result of this variety of <strong>fruits<\/strong> went to various premium <strong>productions<\/strong> which followed from one to each other and made it possible to relaunch some <strong>homemade<\/strong> specialties, including the famous <strong>Blanche<\/strong>, initially launched in 1942. Another important point to remember is the work on <strong>high-stem<\/strong> orchards (200 varieties available and rising on <strong>trunks<\/strong> of 2m) which produce less than 10 tons per hectare versus <strong>low-stem<\/strong> orchards with 30 tons per hectare authorized (but usually producing more). Simply born from the association between a simple <strong><em>espresso<\/em><\/strong> with this tasty <strong>Blanche<\/strong>, full of <strong>pear<\/strong> accents but composed of only 20 <strong>apple<\/strong> varieties. This boosting <strong>cocktail<\/strong> was regularly and massively consumed in many <strong><em>caf\u00e9s<\/em><\/strong> and <em><strong>bistros<\/strong><\/em> all around <strong>France<\/strong>, but suddenly decreased before being relaunched by <strong>Christian Drouin<\/strong> with a dynamic communication campaign. Indeed, the <strong>house<\/strong> invites you to taste or rediscover this <strong>marvel<\/strong> in a selection of <strong>Parisian<\/strong> places, where you would be sure to find it and even in another <strong>cocktail<\/strong> form (photo credits: Alex Plato).<\/p>\n<p>On the other hand, a way to discover the know-how of <strong>Christian Drouin<\/strong> also in terms of <strong>Gin<\/strong> with several varieties of this <strong>spirit<\/strong>, the original version being marked by touches of <strong>almond<\/strong> or <strong>cardamom<\/strong>. Another <strong>edition<\/strong> was launched more recently with a limited number of <strong>ingredients<\/strong> including <strong>pear<\/strong> which would attribute its <strong>Latin<\/strong> meaning and name of &#8220;<em><strong>Pira<\/strong><\/em>&#8221; (topped with 6 <strong>distillates<\/strong> before blending). To this solution, there are added of course <strong>juniper<\/strong>, <strong>pepper<\/strong>, and even <strong>orris root<\/strong> for its <strong>candy<\/strong> aromas, plus two binders which are <strong>vanilla<\/strong> and <strong>lemon<\/strong>. The opportunity to discover a perfect match with the brilliant realization of the young talented <strong>pastry<\/strong> chef <a href=\"https:\/\/www.instagram.com\/cesar.augustyniak\/?hl=fr\"><strong>Cesar Augustyniak<\/strong><\/a>, known for his <strong>vegan<\/strong> creations but who has also captured the essence of <strong>Christian Drouin<\/strong> flavors in the heart of some of his <strong>desserts<\/strong>. On this selection, we thus find a very successful food <strong>pairing<\/strong> with a good toast of <strong>Epoisses<\/strong> cheese.<\/p>\n<p>Indeed, at the occasion of a trip to <strong>Cognac<\/strong>&nbsp;some years ago, <strong>Guillaume Drouin<\/strong> stopped at&nbsp;<strong>Cognac Hine,<\/strong>&nbsp;with the pleasure to enjoy a wonderful vertical tasting of old&nbsp;<strong>Cognac<\/strong>&nbsp;vintages, in the mysterious&nbsp;<strong>Hine House<\/strong>. He seemed to be really seduced by this beautiful journey in this <strong>Spirit Valley<\/strong>, while enjoying a range of&nbsp;<em><strong>millesimes<\/strong><\/em>. So much that he felt a certain connection happening his house and <strong>Hine Cognac<\/strong>, so that he wished to employ former&nbsp;<strong>Cognac<\/strong> casks for aging during 6 months his future <strong>Calvados<\/strong>.<\/p>\n<p>As a matter of fact, those <strong>casks<\/strong> were known to bring flowery <strong>flavors<\/strong> and silky <strong>tannins<\/strong>, perfect to pursue the innovative <strong>Experimental<\/strong> range. In order to marry this 14-year-old experimental&nbsp;<strong><em>cuv\u00e9e<\/em><\/strong>, with accents of&nbsp;<strong>banana<\/strong>&nbsp;and&nbsp;<strong>sugar cane<\/strong>, we find another suggestion of <strong>cheese<\/strong>, but this time typically&nbsp;<strong>Norman<\/strong>&nbsp;and one with of the most powerful tastes that could exist, which is&nbsp;<strong>Neuch\u00e2tel.<\/strong>&nbsp;This delicious product perfectly matches with the structure and the complexity acquired over the years by this <strong>spirit<\/strong>, aged during 14 years. Indeed, the older gets a&nbsp;<strong>Calvados<\/strong>, more <strong>aromas<\/strong> display in mouth and consequently require time to discover and appreciate them of course.<\/p>\n<p>Regarding <strong>corporate culture<\/strong>, it turns out that <strong>Christian Drouin&#8217;s juices<\/strong> consider as <strong><em>millesimes<\/em><\/strong>, bottles from 20 years of <strong>ageing<\/strong>. For your information, these <strong>vintages<\/strong> are mainly aged in sherry <strong>casks<\/strong>, which can bring notes of cooked butter, nuts and <em>rancio<\/em>.<\/p>\n<p>We therefore suggest two <strong>vintages<\/strong>, the 2001 and the 1991.
