And what was your first activity before dedicating yourself to the nobility of the agave?<\/strong><br \/>\n&#8211; I did my project of graduation in an <strong>engineering school<\/strong> in <strong>Mexico City<\/strong> where I was able to work in a <strong>laboratory<\/strong> on yeasts and lactic acid <strong>bacteria<\/strong> (their inoculation) and the fermentation of different <strong>substrates<\/strong>. Outside from this, I was just at a night bus away from the area that produces <em><strong>tequila<\/strong><\/em>. At the smell of <strong>agave<\/strong>, I fell in love with the production process and the product. The time to be certain to have a product of good quality to continue this <strong>adventure<\/strong> which proved to be a real <strong>challenge<\/strong>. In addition, it was necessary to comply with <strong>administrative<\/strong> standards.
