Nested in a narrow bucolic building, we can say that this timeless restaurant has some history inside its walls. <\/strong><\/p>\n

Once upon a time, La D\u00e9mocratie<\/strong><\/a> movement was created in Montlu\u00e7on<\/strong> but sadly ended in 1896<\/strong>, before being replaced by Le Sillon<\/strong> political party, that was originally founded in 1898 by Marc Sangnier<\/strong> (1873-1950). His aim was to bring Catholicism<\/strong> religion closer to the French Republic <\/strong>(photo credits: AP).<\/p>\n

From those endless meetings<\/strong>, only remains a large room<\/strong> where the members of the group<\/strong> gathered, in this former editorial room<\/strong> of the newspaper. A preciously decorated room<\/strong>, full of symbols, starring a commemorative plaque<\/strong><\/em> to Blaise Pascal<\/strong>‘s accident in 1654 in Neuilly<\/strong>, as this mathematician<\/strong> was an inspiration for Marc Sangnier<\/strong>.<\/p>\n

As far as we know, and mostly due to its rich past, La D\u00e9mocratie<\/strong> is consequently more than a restaurant<\/strong>, since this historical<\/strong> place also reserves you a hidden garden<\/strong>, a secret bar<\/strong> to be privatized and a magical reception room<\/strong> that has hosted numerous major<\/strong> moments, since 1902.<\/p>\n

For your information, Aur\u00e9lien Wenger<\/strong>, the grandson of the founder of the place, recently entrusted Pascal Mousset<\/strong>, president of Tables Mousset<\/strong>, to bring these exceptional walls<\/strong> back to life. Furthermore, his culinary<\/strong> group already runs Chez Fran\u00e7oise<\/strong> as the favorite table <\/strong>of the French parliament<\/strong>, without missing, and still in the Left Bank<\/strong>, the vintage<\/strong> styled addresses of Le Petit Marguery <\/strong>and Le Comptoir Marguery<\/strong>. <\/p>\n

This renaissance<\/strong><\/em> task would be operated through different renovation<\/strong> operations, such as a certain refreshed decoration<\/strong>, balancing between history<\/strong> and modernity<\/strong> with the recruitment of an inspired chef<\/strong>, named St\u00e9phane Savorgnan<\/strong>.<\/p>\n

Following a strong experience in the Mill\u00e9simes 62<\/strong> restaurant, where he produced seasonal<\/strong> cuisine, the chef St\u00e9phane Savorgnan <\/strong>has been missioned to concoct again a bistronomic<\/strong> menu, that honors different types of seasonal<\/strong> products. Among them, you could count on pumpkin<\/strong> soup with roasted hazelnuts<\/strong> and chestnut<\/strong> chips, cassolette<\/strong><\/em> of veal sweetbreads<\/strong> with morel<\/strong><\/em> sauce, scallops<\/strong> from the Seine Bay<\/strong> with its passion<\/strong> fruit sauce and celery mousseline<\/strong><\/em>, poached conference pear<\/strong>, white chocolate<\/strong> and speculoos<\/em><\/strong> cheesecake and even fig<\/strong> compote<\/em>.<\/p>\n

Once inside, you could appreciate the apparent natural light<\/strong> passing through the fully renovated dining room<\/strong>, thanks to the large bay windows<\/strong>. On top of that, you could seat on the green banquettes<\/strong><\/em>, which are so reminiscent of the garden<\/strong> lights, along a couple of multicolor art deco<\/strong><\/em> lamps, adorned with suitable tablecloths<\/strong>.<\/p>\n

In this elegant but relaxed atmosphere<\/strong>, you would undoubtedly be seduced by some evocations from the past<\/strong> mixed with the explicit<\/strong> inspiration of a skillful chef<\/strong>. A quality time which is enhanced by an unsuspected garden<\/strong> from the so urban Raspail Boulevard<\/strong>, with even a few tables scattered in this charming greenery <\/strong>(photos credits: La Democratie).<\/p>\n

In terms of extra privatizations<\/strong>, you can be sure that the former Sillon<\/strong> newsroom can accommodate around thirty people with a special access, from the garden <\/strong>or an independent entrance<\/strong> from the restaurant<\/strong> itself. Pursuing the spirit from the eponym newspaper <\/strong>which was printed in the basement of this edifice<\/strong>, you would feel there as comfortable as the former journalists<\/strong> or theoreticians<\/strong> who occupied this large wooden table<\/strong>, that allows intimate gatherings<\/strong>.<\/p>\n

Surmounted by a glass roof<\/strong>, where a skylight<\/strong> built in 1907, bears the emblems of the Sillon<\/strong>, featuring a mistletoe<\/strong> and an ear of wheat<\/strong>, tied with a ribbon<\/strong>.<\/p>\n
