A house renowned for its exceptional wines, founded by Franck Chavy in the 1980s,&nbsp;following the steps of his father Henri Chavy, embodying tradition and passion for the art of viticulture. <\/strong><strong>Indeed, for several generations, the Chavy family has been cultivating vines with love and devotion, thus creating wines that reflect the richness of the Burgundy <em>terroir<\/em>. In this article, we will explore the history, working methods and emblematic <em>cuv\u00e9es<\/em> of this Domaine Franck Chavy, who decided himself to perpetuate his family&#8217;s winegrowing tradition by creating his own estate. Nowadays, his <strong>domain<\/strong> currently covers <strong>10 hectares<\/strong>, including 3.5 ha in <strong>Morgon<\/strong>, 2 ha in <strong>Brouilly<\/strong>, 3 ha in <strong>R\u00e9gni\u00e9<\/strong>, 0.5 ha in <strong>Chardonnay<\/strong> and 0.5 ha in <strong>Beaujolais<\/strong> villages. A powerful and round gastronomic <strong>wine<\/strong>, full of complexity and <strong>red fruity<\/strong>&nbsp;flavored, again composed of the omnipresent <strong>grape<\/strong> variety of <strong>Black <em>Gamay<\/em><\/strong>&nbsp;and its surprising white juice, growing on these old <strong>vines<\/strong> (between 50 and 100 years).&nbsp;<\/p>\n<p class=\"p1\">Thereafter, this <strong>juice<\/strong> would have been aged during <strong>8 months<\/strong> in <strong>tanks<\/strong>, under a <strong>micro-oxygenation<\/strong> process, more adapted to this <em><strong>Gamay<\/strong><\/em> grape variety, which could be very sensitive to <strong>oxidation<\/strong>.&nbsp;<\/p>\n<blockquote>\n<p class=\"p1\">Indeed, the <strong>oxygen<\/strong>, used<span class=\"Apple-converted-space\">&nbsp;<\/span>in very small quantities and monitored by a daily <strong>control<\/strong>, facilitates the <strong>maturation <\/strong>and the <strong>ripening<\/strong>&nbsp;of the <strong>tannins<\/strong> of these <strong>wines<\/strong>. Rarely employed in the <em><strong>Beaujolais<\/strong><\/em> region, this approach remains constantly <strong>studied<\/strong>&nbsp;in order to be improved.&nbsp;The sensation provided by this family <em><strong>Brouilly<\/strong> elixir<\/em> could be reinforced by a serving temperature between 15 and 17\u00b0 and can be kept in your favorite <strong>cellar<\/strong> between 3 and 10 years.
