Founded in 1867, opposite the legendary Gare Saint-Lazare and witness to the transformations of Paris, this institution remains a jewel of Art Nouveau and culinary art, making it a true institution.<\/strong><\/p>\n<p><strong>In addition, <em>Mollard<\/em> has preserved its unique character thanks to meticulous renovations carried out by St\u00e9phane Malchow, its owner, and Philippe Andr\u00e9, a renowned architect. During the <em><strong>First World War<\/strong><\/em>, the <em><strong>brasserie<\/strong><\/em> saw its <strong>clientele<\/strong> decimated, and the <strong>post-war<\/strong> period plunged the establishment into a period of <strong>oblivion<\/strong>. Then, its sublime&nbsp;<strong>decor<\/strong>&nbsp;was considered as <strong>outdated<\/strong> and was hidden under layers of <strong>paint<\/strong> and <strong>mirrors<\/strong>. Only the central <strong>glass roof<\/strong> was lost at that time. Bought by the <strong>Gauthier<\/strong> family in <strong>1928<\/strong>, we can consider that <em><strong>Mollard<\/strong><\/em> has weathered many <strong>crises<\/strong>, particularly that of the <strong>1930s<\/strong>, before once again becoming an essential place in <strong>Paris<\/strong>&#8216; post-war <strong>period<\/strong>.&nbsp;Nowadays, <em><strong>Mollard<\/strong><\/em> is listed as a <strong>historical monument<\/strong> since <strong>1989<\/strong>, remaining a reference in the landscape of centenary&nbsp;<strong>Parisian<\/strong> <em><strong>brasseries<\/strong><\/em> today. Thereafter, this&nbsp;<strong>place<\/strong> has evolved with the times, while retaining its unique <strong>character<\/strong>. In <strong>2012<\/strong>, the <strong>Malchow<\/strong> family had already begun restoring this amazing <strong>facade<\/strong>, removing the <strong>grey<\/strong>&nbsp;dirt accumulated over time from <strong>pollution<\/strong>, and eventually illuminating the <em><strong>Mollard<\/strong><\/em> name, with a <strong>stained glass<\/strong> fresco. This first step marked the beginning of a series of <strong>renovations<\/strong>, aimed at restoring this <em><strong>brasserie<\/strong><\/em> to its former <strong>glory<\/strong>, while respecting its <strong>history<\/strong>.&nbsp;Thus, by reviving its <strong>mosaics<\/strong>, its countless <strong>stained glass<\/strong> windows and other <strong>decorative<\/strong> elements that made <em><strong>Mollard<\/strong><\/em> a so much acclaimed <strong>establishment<\/strong>, from the end of the <strong>19th century<\/strong>, the <em><strong>brasserie<\/strong><\/em> is reconnecting with its <strong>history<\/strong> while looking to the future. For instance, <strong>Philippe Andr\u00e9<\/strong>, who specializes in the renovation of <strong>historic sites<\/strong>, carried out this <strong>meticulous<\/strong> mission, recreating the <strong>glass roof<\/strong>, similar to period <strong>documents<\/strong>, discovered in the <strong>archives<\/strong> of the <em><strong>French Institute of Architecture<\/strong><\/em>. This <strong>skylight<\/strong> transformed the appearance of the <strong>central room<\/strong>, reviving the spirit of the <strong>brewery<\/strong>, as it existed when it was founded.&nbsp;One of the great successes of this <strong>renovation<\/strong> is undoubtedly the restoration of the private <strong>salons<\/strong>, located at the back of the <strong>establishment<\/strong>. These more intimate&nbsp;<strong>spaces<\/strong>, once again decorated by the architect <strong>Edouard Niermans<\/strong>, had lost much of their <strong>charm<\/strong> over the decades. The green and gold <strong>mosaics<\/strong>, characteristic of the <em><strong>Art Deco<\/strong><\/em> style, have been <strong>unearthed<\/strong>, intact after being hidden for nearly <strong>50 years<\/strong>.&nbsp;While the <strong>decoration<\/strong> has undergone major <strong>renovations<\/strong>, the homemade&nbsp;<strong>cuisine<\/strong>, proposed there, continues to perpetuate <em><strong>Mollard<\/strong><\/em>&#8216;s gastronomic tradition. The <em><strong>brasserie<\/strong><\/em> is particularly renowned for its <strong>seafood<\/strong>, including its <strong>oyster<\/strong> beds at the entrance and its specialties, such as <strong>lobster<\/strong> thermidor or the unmissable southern&nbsp;<em><strong>bouillabaisse<\/strong><\/em>.<\/p>\n<p>In fact, the chef <strong>Arnaud Regnier<\/strong>, active since <strong>1995<\/strong>, perpetuates this <strong>culinary<\/strong> heritage, having learned alongside former chef <strong>Jo\u00ebl Prud\u2019homme<\/strong>.
