The famous Mollard<\/em> brasserie, located on rue Saint-Lazare, has recently undergone a metamorphosis to regain its original splendor, particularly in its private lounges. Founded in 1867, opposite the legendary Gare Saint-Lazare and witness to the transformations of Paris, this institution remains a jewel of Art Nouveau and culinary art, making it a true institution.<\/strong><\/p>\n

In addition, Mollard<\/em> has preserved its unique character thanks to meticulous renovations carried out by St\u00e9phane Malchow, its owner, and Philippe Andr\u00e9, a renowned architect. The history of the Brasserie<\/strong><\/em> Mollard<\/strong><\/em><\/a> is inseparable from that of Paris<\/strong>. Founded in 1865<\/strong> by the Mollard<\/strong> couple, who just arrived from Savoy<\/strong>, this legendary Parisian<\/strong> brasserie<\/strong><\/em> prospered thanks to the proximity of the Saint-Lazare<\/strong> train station, which was then in full development <\/strong>(photo credits: Brasserie Mollard<\/em>).<\/p>\n

The success of this establishment<\/strong> allowed its founders to undertake ambitious renovation<\/strong> work in 1895<\/strong>, with the help of the architect Edouard Niermans<\/strong>, famous for Le Negresco<\/strong><\/em> hotel in Nice<\/strong>, who designed here not only the layout of the place<\/strong>, but also its furniture<\/strong> and decoration<\/strong>.<\/p>\n

Thanks to this restoration, the original geometric<\/strong> patterns have been restored, giving the salons<\/strong> their former splendor<\/strong> once again, in those Jardins d’Isly<\/strong><\/em> salons.<\/figcaption><\/figure>\n

However, unfortunately the two World Wars<\/strong><\/em> marked a turning point for Mollard<\/strong><\/em>. During the First World War<\/strong><\/em>, the brasserie<\/strong><\/em> saw its clientele<\/strong> decimated, and the post-war<\/strong> period plunged the establishment into a period of oblivion<\/strong>. Then, its sublime decor<\/strong> was considered as outdated<\/strong> and was hidden under layers of paint<\/strong> and mirrors<\/strong>. Only the central glass roof<\/strong> was lost at that time. Bought by the Gauthier<\/strong> family in 1928<\/strong>, we can consider that Mollard<\/strong><\/em> has weathered many crises<\/strong>, particularly that of the 1930s<\/strong>, before once again becoming an essential place in Paris<\/strong>‘ post-war period<\/strong>. Nowadays, Mollard<\/strong><\/em> is listed as a historical monument<\/strong> since 1989<\/strong>, remaining a reference in the landscape of centenary Parisian<\/strong> brasseries<\/strong><\/em> today. Thereafter, this place<\/strong> has evolved with the times, while retaining its unique character<\/strong>. Under the leadership of St\u00e9phane Malchow<\/strong>, grandson of Pierre Gauthier<\/strong>, the family that has been owning the property<\/strong> since 1929<\/strong>, it seems that Mollard<\/strong><\/em> has embarked on a vast renovation<\/strong> campaign for its 150th anniversary<\/strong>.<\/p>\nngg_shortcode_1_placeholder\n

The mirrors<\/strong>, designed to reflect the lines of the mosaics<\/strong>, have been arranged to reinforce the feeling of depth<\/strong> and movement<\/strong>..<\/figcaption><\/figure>\n

Thanks to St\u00e9phane Malchow<\/strong>\u2019s passion for preserving heritage<\/strong> and his collaboration with artisans<\/strong> and experts<\/strong>, it looks as if Mollard<\/strong><\/em> is today more than ever a living testimony to Paris<\/strong>\u2019 rich architectural<\/strong> and gastronomic<\/strong> past. In 2012<\/strong>, the Malchow<\/strong> family had already begun restoring this amazing facade<\/strong>, removing the grey<\/strong> dirt accumulated over time from pollution<\/strong>, and eventually illuminating the Mollard<\/strong><\/em> name, with a stained glass<\/strong> fresco. This first step marked the beginning of a series of renovations<\/strong>, aimed at restoring this brasserie<\/strong><\/em> to its former glory<\/strong>, while respecting its history<\/strong>. Thus, by reviving its mosaics<\/strong>, its countless stained glass<\/strong> windows and other decorative<\/strong> elements that made Mollard<\/strong><\/em> a so much acclaimed establishment<\/strong>, from the end of the 19th century<\/strong>, the brasserie<\/strong><\/em> is reconnecting with its history<\/strong> while looking to the future. A successful example<\/strong> of how an establishment<\/strong> can evolve without denying its roots<\/strong>.<\/p>\n

Then, in 2017<\/strong>, a new milestone<\/strong> was reached with the reconstruction of the original glass roof<\/strong>, destroyed in 1920<\/strong>. For instance, Philippe Andr\u00e9<\/strong>, who specializes in the renovation of historic sites<\/strong>, carried out this meticulous<\/strong> mission, recreating the glass roof<\/strong>, similar to period documents<\/strong>, discovered in the archives<\/strong> of the French Institute of Architecture<\/strong><\/em>. This skylight<\/strong> transformed the appearance of the central room<\/strong>, reviving the spirit of the brewery<\/strong>, as it existed when it was founded. One of the great successes of this renovation<\/strong> is undoubtedly the restoration of the private salons<\/strong>, located at the back of the establishment<\/strong>. These more intimate spaces<\/strong>, once again decorated by the architect Edouard Niermans<\/strong>, had lost much of their charm<\/strong> over the decades. It’s sure that over time, fashions<\/strong> and tastes<\/strong> have evolved, and the superb mosaics<\/strong> and decorative<\/strong> elements had been hidden or abandoned. <\/p>\n

Each element has been designed to recreate the atmosphere of the Roaring Twenties<\/strong><\/em>, a prosperous period for Mollard<\/strong><\/em>..<\/figcaption><\/figure>\n

This restoration<\/strong> in collaboration with craftsmen<\/strong> such as master glassmaker \u00c9ric Bonte<\/strong>, who recreated engraved glass panels<\/strong>, representing nymphs<\/strong>, and the mosaicist<\/strong> from the Lilikpo<\/strong><\/em> workshop. The green and gold mosaics<\/strong>, characteristic of the Art Deco<\/strong><\/em> style, have been unearthed<\/strong>, intact after being hidden for nearly 50 years<\/strong>. While the decoration<\/strong> has undergone major renovations<\/strong>, the homemade cuisine<\/strong>, proposed there, continues to perpetuate Mollard<\/strong><\/em>‘s gastronomic tradition. The brasserie<\/strong><\/em> is particularly renowned for its seafood<\/strong>, including its oyster<\/strong> beds at the entrance and its specialties, such as lobster<\/strong> thermidor or the unmissable southern bouillabaisse<\/strong><\/em>.<\/p>\n

In fact, the chef Arnaud Regnier<\/strong>, active since 1995<\/strong>, perpetuates this culinary<\/strong> heritage, having learned alongside former chef Jo\u00ebl Prud\u2019homme<\/strong>. As for pastry chef<\/strong>, named Nicolas Zedouard<\/strong>, he excels in the art of pastry<\/strong>, after notably having worked in the event catering<\/strong> sector.<\/p>\n
