For your information, the history of Prunier dates back to 1872, when Alfred Prunier opened the first oyster bar in Paris. In 1900, Prunier innovated again by serving wine and champagne by the glass, thus creating the first so-called tasting bar. Therefore, Émile Prunier, son of Alfred, continued this tradition of innovation in 1924 with the opening of Prunier, in avenue Victor Hugo. Then, Émile Prunier, visionary and daring entrepreneur, plays a key role in the creation of the first national production of French caviar.
In 1918, he became the preferred contact for the distribution of Russian caviar in France. Visionary, he also developed the local production of caviar from wild sturgeon caught on the French coasts and in the rivers of the Gironde and the Dordogne.
