L’Évadé restaurant, a gastronomic address near Pigalle, entered into the Michelin Pantheon

L’Évadé, a Parisian restaurant opened in October 2023, has just entered the prestigious Michelin guide. A few steps from the Théâtre Saint-Georges, this welcoming restaurant is the result of the collaboration between chef Rémi Poulain and his culinary partner Anthony Rivière.

At first, L’Évadé is a true alliance between two complementary talents. Rémi Poulain, a true virtuoso chef, counts more than 25 years of experience in prestigious establishments. After a promising start at the Auberge des Saint-Pères, he perfected his art at Cyril Lignac’s Quinzième address, along Le Prince de Galles palace, and even Le Relais d’Auteuil. In 2019, he joined forces with Anthony Rivière, an inspired entrepreneur who had already distinguished himself with Burger & Fries, before founding Escudella restaurant in the 6th district of Paris and thereafter launching L’Évadé (photo credits: AP).

Supported in the dining room by Kadidja Ba, be ready to discover a creative and refined cuisine, in a heart of a cultural quarter, full of theaters and music halls. The name of this restaurant pays homage to Bertrand Clauzel, former Napoleon‘s general, evoking a certain spirit of freedom and audacity. The interior combines exposed beams and stone, with red armchairs and black lacquered tables, somehow offering a theatrical atmosphere. Adding to this, a piano in one of the dining rooms, occasionally livens up jazzy evenings. In the basement, two private spaces can be used to organize private or even professional events.

In fact, Rémi Poulain’s culinary philosophy is mostly based on the use of simple products, enhanced by gastronomic techniques. The menus vary according to the inspirations and supplies, with creations such as original creations, like heirloom tomatoes mixed with strawberries, but also mozzarella ice cream and timut pepper. Apart from this, clients can also compose their meal around a wide choice of seasonal proposals, from delicious starters, emanating countless cosmopolitan influences, such as oeuf cocotte with mushrooms or candied trout and its sesame cream on a wasabi emulsion, to classical hearty dishes, such as chicken supreme, especially stuffed with chestnuts in Autumn.

On top of that, homemade gnocchi, prepared according to the ingredients of the moment, are among the house specialties. They can be accompanied by truffles or chanterelles, along thyme-lemon butter, topinambours and fresh almonds. In order to accompany those delights, it seems that L’Évadé also stands out for its large list of around 300 wines. These references, rarely found on Parisian tables, naturally enchant any wine lovers. As for desserts, the runny chocolate doughnut, unless you prefer some creamy and aerial pomelos delight with a lemon basil ice cream, or even candied apple and its Isigny cream on a Breton shortbread, before a white chocolate mignardise.
